01 · Story

Family recipes from Beirut, one shared table.

Our kitchen on Plaza de la Moraleja first opened in September 2008, and closed its doors in 2025. This February we reopened: the same square, a refurbished dining room, and one rule that doesn't bend — everything is cooked the same day it's served. The recipes are still the ones they always were: Lebanese, homestyle, no fusion, nothing reinvented.

Generous Lebanese mezze table at du Liban
du Liban's team plating a dish in the kitchen

"In every mezze there is a family story. We cook as in our grandmother's home in Beirut: with time, with hands and with memory."

The wood-fired oven, the stone mortar and the grill are the three pillars of our kitchen. From them come freshly baked manoucheh, the knife-chopped tabbouleh, the charcoal-grilled lamb and the spiced kebabs made by hand.

We work with day-fresh produce: herbs, milk-fed lamb, market fish and seasonal vegetables. Sauces, pickles and sweets are prepared in our kitchen every morning. Nothing is cooked the day before.

When you come to du Liban

The first course takes its time. And so does the last.

Eating Lebanese means eating slowly. Mezze to share, wine, conversation. Reserve with time and let the table fill little by little — like in Beirut.
